Elderflower Champagne
As well as being a natural cure for hay fever, elderflowers
can be used to make a bubbly celebratory brew.
YOU WILL NEED
• 8 litres/14 pints water
• 1.25kg / 2 ¾lb sugar
• 8 large elderflower heads
• 4 lemons (two juiced, two sliced)
• 4tbsp mild white wine vinegar
Bring the water to the boil, dissolve the sugar in it and leave to cool.
Add the elderflowers. lemon juice and slices, plus the vinegar.
Cover with a cloth and leave for 24 hours. Strain with a fine sieve or
muslin cloth, squeezing the flowers to release their flavour,
then store in screw-top bottles. It will be ready to enjoy in 10-14 days
and should be drunk within a month.
